CHEF STEPHEN TOPPER CAPTURES SILVER MEDAL AT
ACF-SANCTIONED COMPETITION
SARATOGA SPRINGS, N.Y. – Stephen Topper, Chef de Cuisine at Saratoga Polo Catering and Events, won a silver medal/second prize at the recent American Culinary Federation (ACF) sanctioned Culinary Cornucopia at the Albany Marriott.The 16th annual Culinary Cornucopia featured nine chefs in the daylong competition based upon the stringent international guidelines of the ACF. No gold medal/first prize was awarded by the ACF-certified. judges.Chef Topper’s creation for the competition was Chicken Two Times, a truffle-laced breast; and a leg stuffed with chicken sausage, braised fennel, rosemary-scented soft polenta and olive jus de poulet. A total of over 500 people sampled four courses prepared by the chefs for the competition, with proceeds benefiting Living Resources of Schenectady, a non-profit organization that promotes and provides services to individuals with disabilities.Chef Topper grew up in Galway where he learned first-hand about the importance of using farm-fresh products on his family’s farm. He received his bachelor’s degree in culinary arts from Johnson & Wales University in Providence, Rhode Island. Before teaming up with Chef David Britton of the Springwater Bistro and Saratoga Polo Catering and Events, Chef Topper was Executive Sous Chef at The Sagamore Resort on Lake George and executive chef at The Friends Lake Inn in Chestertown. He has won many awards including Wine Spectator’s Grand Award.
